We chose to offer only local wines

We offer a selection of exclusively local wines because we love our land and want to grant value to the local area that gives life to our cuisine…to complete its story. We believe that our traditional cuisine can be enhanced by a wine from the same area, creating an affinity of characteristic tastes and aromas, a homogeneous blend of sensations and flavors. The obvious choice was to start with Pignoletto and Sangiovese. It is traditional for taverns in this area to offer a glass of Sangiovese or Pignoletto to guests and travellers seeking refreshment. Ours is not a conventional wine list because we are a tavern, not a wine bar, and in taverns the wine cellar grows out of the experiences and traditions handed down from one host to the next. Hence our desire to introduce you to our local wines, their origins and histories, offering you the options that we feel best convey this tradition.

Pignoletto

…is the most typical and characteristic white-grape wine in the province of Bologna. In fact, the first instances of a grape called Pignoletto in historical records date to the 19th century. It has been historically grown in the Bologna hills, particularly in the areas of Monteveglio, Bazzano, Castello di
Serravalle, Monte San Pietro e Zola Predosa. This wine usually comes sparkling, and we advise you to pair it with traditional local appetizers such as crescentine, tigelle and mixed coldcuts. Still Pignoletto features the most important aromas of this grape, and is perfect to accompany any meal. Our selection includes some of the most representative local producers and focuses specifically on small, family-run producers who celebrate wine as a spontaneous and natural fruit of the land.
